Best Ever Easy Carrot Cake Recipe

This foolproof best ever easy carrot cake recipe is easy eating and declicious. No scales needed! This classy little number has been my favourite for some years now and always gets rave reviews. This light soft cake eats well just plain or with a sprinkle of icing sugar.

Naturally for a special occation you might like to dress it up with a topping of creamy buttercream or cream cheese buttercream. To make more of a statement sandwich two layers together with buttercream and top with the same. Add marzipan carrots and it's fit for the most special of friends.

Easy Carrot Cake Recipe

Prep time 10 minutes
Cooking time 35-40 minutes
325F (170C) Gas Mark 3

4 eggs
1 cup white sugar
1 cup brown sugar
1 cup vegetable oil
2 cups all purpose flour
2 tsp. baking powder
1/2 tsp baking soda
1 tsp. salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3 cups grated raw carrot
1/2 cup raisins
1/2 cup finely chopped nuts (optional. Omit if serving to small kids)
  1. In a large bowl, beat eggs well and add in sugars gradually, beating until light.
  2. Beat in oil.
  3. In a separate bowl mix together flour, baking powder, bakings soda, salt, cinnamon and nutmeg.
  4. Stir into egg mixture gently but thoroughly.
  5. Stir in carrots, raisins and nuts (if using)
  6. Pour into greased and floured tin (13" x 9")
  7. Bake at 350 F (170 C)for 35-40 minutes until risen and golden.
  8. Test with a skewer which should come out clean.
To reduce the sweetness and the sugar content of this easy carrot cake recipe, substitute one of the sugars for honey (I use four dessertspoons honey for each cup of sugar)

NOTE; I used HALF quantities to make the 7" square carrot cake pictured above.

For a lighter colour and a subtle ginger flavour, use 2 tspns ground ginger in place of the cinnamon. For more ginger taste add grated ginger or chopped crystalized ginger.
